A Word in Season

I had the awesome honour today of  giving one of my patient's a word in season. I'm a nurse for a family doctor, and last week as I was getting the vitals and other requirements needed for a young lady prior to seeing the doctor, I felt to tell her that she was beautiful. Well, I tossed this around in my mind and was a little worried of what she would think if I told her that. I didn't end up telling her and it bothered me the rest of the day.

Today she came in again. She was teary and looking for help in dealing with some stressors. After taking down all her information, I turned to her and told her that I was a Christian and that God wanted her to know that she was beautiful. She just started sobbing and said "Thank you". I told her that I agreed. Sometimes it's hard to obey God, but it sure does feel good when we do. We have to remember that God wants to use us to minister the love of God to others. We don't know what goes on in the lives of others but God the Father does.

God wants to use you to be His mouthpiece. There are hurting people all around you. Don't be afraid to give someone a word in season.

Blessings, Diane

Loaded Baked Potatoe & Chicken Casserole

I happened to see this recipe on Facebook today and thought I would give it a try. Here is the original link that I got it from https://www.facebook.com/photo.php?fbid=589680781053686&set=pb.100000353097028.-2207520000.1374362780.&type=3&theater

I tweaked it a bit, so I'll give you my version of this. I'm posting it because it was a huge success. A keeper for my guys!

RECIPE

1/2 cup olive oil
1 tsp salt
1 tablespoon ground pepper
1/2 tablespoon garlic powder
1 tablespoon chopped garlic
1-2 tsp .Italiano seasoning or basil
1 tsp seasoned salt

Mix the above together in a large plastic bowl that has a lid

10-12 medium red potatoes diced (not too small)

Add the diced potatoes to the olive oil mixture and shake up (with the lid on!) Don't throw out the extra olive oil mixture!

Heat the oven to 475 F. Grease a 9 x 13 glass pan and put the potatoes in. Bake in the oven for 30-40 minutes (flipping the potatoes every 15-20 minutes)

2 lbs. chicken breasts
1 onion chopped
1/2 a red and green pepper

Put chicken in the olive oil mixture. Add some Montreal chicken spice. Fry this up in the frying pan.

After a few minutes add in the chopped veggies.

When cooked, cut up the chicken. (I find it much easier to cut up after it's been cooked!) Put back in the frying pan and add in 1/2 cup chopped bacon or bacon bits. When potatoes are done, add the chicken and veggies and mix up in the glass baking dish.

Sprinkle Mexican cheese mixture or any cheese that you have. Turn the oven down to 400 F and put dish back in the oven for 5-10 minutes or until cheese is melted. Serve with sour cream or ketchup. Yum, Yum!!

It's easy and very tasty. Enjoy!

Blessings,

Diane
